Intense and elegant PGI extra virgin olive oil.

This oil is a bright deep green, its aroma is intense and elegant on the nose, characterised by rich vegetable nuances, above all artichoke and thistle, very fruity and pungent, greatly fragrant, fairly structured on the palate, fruity and harmonious, it has a good structure and balance, with a typical and pronounced spicy final note.

Fruit harvest and processing

This oil, which comes from the olive groves of the Podere Volpaio, is made from olives of the Frantoio, Leccino and Moraliolo varieties, all organically grown, exclusively hand-harvested before they are fully ripe and pressed within 24 hours of harvesting, in the authorised organic mill. The processing cycle, after eliminating the leaves by means of a leaf remover, consists of a crushing process in a hammer mill; the paste thus obtained is transferred to a malaxator, where it rests for a period that varies between 20 and 30 minutes, during which the particles of oil aggregate and begin to separate from the paste, all at a temperature between 20-22°C in the absence of oxygen, in order to maintain the organoleptic characteristics and healing properties of this excellent gift of nature unaltered as much as possible; then it is the moment to proceed to the actual extraction stage through a two-phase decanter: the process is therefore carried out at a low temperature, without adding water, so as to enhance the aromatic and organoleptic characteristics. Storage and the natural settling of the Nobile Drupiere oil occur in small stainless steel tanks, under an inert gas atmosphere, followed by the bottling process.
